Chicken Pesto on Damper Roll
Serves 1
INGREDIENTS:
- 1 Tip Top® Damper Roll
- 120g chicken breast, uncooked
- 1 small handful rocket lettuce
- 4 cherry tomatoes, cut in half
- 1 tablespoon basil pesto
- 1/2 teaspoon chilli flakes
METHOD:
- Pan fry chicken breast fillet until cooked through with golden brown colour on both sides
- Allow chicken to cool
- Spread pesto onto bun base. Add chicken. Top with cherry tomatoes, rocket and chilli flakes. Place other half of bun on top
